Wianno

Wianno is a townlet on the southern Cape Cod coast within spitting distance of Cotuit. Same bay, similar oysters. Wiannos are grown in racks and bags just off the bottom and are exposed at low tide. This helps them cup up into very pretty oysters. Always three inches, they are brown on top, green and white on the bottom. The white, slightly pink meat is slightly sweet and profoundly salty. If you like Wellfleet-style salt blasts, these make a good alternative.
